Yogurt is made. Kale salad is made (I scaled back, but still have too much), eggs are boiled, chicken is sautéed, sweet potato is baked and 2 lunches are packed. The salmon filets were so huge I couldn’t bring myself to buy one. I’ll check out Whole Foods on my way home from work tomorrow. I really just need to get some lean protein for 2 more lunches this week and the preparation part of my plan will be complete.
And making the effort – preparing healthy food for myself has triggered a long buried sense of well-being. It’s like I really did remember “oh yeah – I AM worth the effort.
